"Fukushima" rice milled to 60%, SMV +3.5, acidity 1.0, 15.4% abv. Full aroma, bakery notes, full flavoured, tangy, with melon and nut notes, a little starchy, but the acidity keeps this smooth, silky, and well-balanced. A satisfying, contemplative brew.
