Sempuku Kura Junmai Daiginjo

Sempuku Kura
From Hiroshima Prefecture's Miyake Honten. Senbon Nishiki milled to 50% and brewed with #21 yeast, SMV +4, acidity 1.5, 17.5% abv. Quite a big and full sake for the style, but seems to fit with other Hiroshima sake. Smooth, soft, round, but without ever teetering into cloying, and with a lively bitter finish.
